    Try Australian David Blackmore’s Fullblood Wagyu. 10+ marbelling will blow your mind, I think it might actually be better than A5- and I’ve been to Kobe.

    Just to understand…you’re saying always cut the picanha with the grain because the final cut will be against it…but you do cut a ribeye, strip or other steak cuts against the grain and the final cut on the plate is with the grain….this doesn’t make sense to me, so I’d appreciate your explanation

    i just realised this. but in germany we call it "tafelspitz" and its acually quite common. though we dont make staek from it. we usually make "sauerbraten" or braise it. now i want to try and make steak with it.
